The first irregularity I observed was that the exhaust manifolds were installed using gaskets. In particular from 4 studs that thread into the water jacket of the heads.
This is also where the smoke comes from when I start it.

There are three locations that hold water and they basically rust through. If this is your issue remove it bring and weld all three of the plug like areas. My 23 year old Seadoo sprung a leak from the manifold - it looked like someone drilled a hole clean through it.
Turns out the old ones have a hole in them from the casting process and Seadoo welds something over the hole to keep it sealed. They typically fail after 15 years so I doubt its your problem but I thought I would mention it. With a dry ski on an agnle fill the hull with a similar amount of water till the drive shaft seal is covered and see where it leaks out check around exhaust outletdrain bungssteering cables etc and if the seal is leaking it will leak out by the intake grate.
The Dealer adapter replaced the flow from the impeller on the pump and flows up from the bottom of the exhaust manifold and through the cylinder jackets to the top of the head where the thermostat lives.
